OnSugar blogger Sophie's Sweeties has a healthy banana bread recipe that cuts calories by using Kashi cereal, apple sauce, and yogurt.

My mom used to eat a slice of homemade banana bread every morning for breakfast. She would make 10 loaves at a time and freeze them until the last loaf was purely a delicious memory. She made a few loaves with chocolate chips, some with walnuts, and a couple were made plain for my picky brother. No matter the preference, I think everyone would agree that my banana bread is a healthy alternative to my mom's famous staple.

What you'll need:
1 1/2 Kashi Go Lean cereal
1 1/3 C oat flour (or any flour you'd like)
1 T baking powder
1/2 t salt
1/4 t baking soda
2 T ground flax seeds
3 medium bananas, mashed
6 oz plain yogurt
2/3 C low fat milk (I used almond milk)
1/2 C applesauce
2 scoops of egg white protein (I use Jay Robb's vanilla egg white protein, but 2 large egg whites works as well)
1 t vanilla extract
1/4 C agave or honey

Preheat oven to 400 degrees F. Line a bread loaf pan with aluminum foil and spray with non-stick spray. In a large bowl, combine the Kashi cereal with the milk, stirring to coat. Let stand 3 minutes. In a medium bowl, combine bananas, apple sauce, vanilla extract, honey, and yogurt. Add this mix to the wet cereal. In a separate bowl combine the oat flour, baking soda, baking powder, flax seed, and salt. Add the dry mix to the wet mix, stirring with a rubber spatula to combine. Fill the loaf pan with the batter, and bake for 30 minutes. Let the bread cool before slicing (if you can wait!!)

Yield: 12 slices (per slice) 141 cals, 25 g carbs, 8 g protein, 11 g sugar, 2 g fat, 3 g fiber
