Gluten

Gluten is wheat gum that is a mixture of proteins which allows dough to be, well doughy; it gives kneaded dough elasticity. Gluten can be extracted from the flour of wheat (barley and rye), but is not itself wheat. Celiac Disease is when Gluten causes allergic reactions in certain people.
