Tacos are such a great dinner option. They're easy to make, you can fill them with just about anything, and they're low in carbs and calories. Since I'm a fan of Garden of Eatin', I decided to try out their Blue Corn Taco Dinner Kit.

| This taco kit came with 12 taco shells, a packet of powdered seasoning, and a packet of taco sauce. I made some veggie tacos with black beans, yellow peppers, green peppers, corn, and tomatoes. The seasoning and taco sauce added a smooth texture and just the right amount of spiciness. If you're concerned about the amount of sodium, just use less seasoning and sauce.
They tasted great but as soon as you put your hot ingredients inside the taco, the steam makes the shell lose its crispiness, so it almost seems stale, even though it isn't. It did stay together nicely when I took a bite, so that's a plus. Overall, I liked the way the tacos tasted, so I'd definitely buy this kit again. It also comes in yellow corn, if you prefer that over blue. |
