Ingredients
- Filling:
2 tablespoons Earth Balance
2 apples, peeled and chopped
1 tablespoon maple syrup
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
- Batter:
1 tablespoon canola oil
2/3 cup sugar
1 teaspoon vanilla
1 egg
1 cup applesauce
1/2 cup vanilla soy milk
2 cups whole-wheat flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup chopped walnuts
Directions
- Preheat oven to 350°F. Put 12 cupcake wrappers in a muffin tin.
- In a small saucepan, melt the Earth Balance over medium heat. Stir in the maple syrup and apples, and sprinkle on the cinnamon and nutmeg. Cook apples for 10 to 12 minutes.
- While the apples are softening, in a large bowl, beat together the oil, sugar, vanilla, egg, applesauce, and vanilla soy milk.
- Combine the remaining ingredients in a small bowl, except for the nuts. Then pour it into the bowl of wet ingredients, mixing well.
- Fill a quarter of each muffin wrapper with the batter. Spoon apple mixture into the center of each (do not spread). Top with remaining batter. Sprinkle with a few chopped walnuts. Bake for about 20 minutes or until a toothpick inserted comes out clean.
