Dairy-Free Apple Muffins

Ingredients

  1. Filling:
    2 tablespoons Earth Balance
    2 apples, peeled and chopped
    1 tablespoon maple syrup
    1/2 teaspoon cinnamon
    1/8 teaspoon nutmeg
  1. Batter:
    1 tablespoon canola oil
    2/3 cup sugar
    1 teaspoon vanilla
    1 egg
    1 cup applesauce
    1/2 cup vanilla soy milk
    2 cups whole-wheat flour
    2 teaspoons baking powder
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1/4 cup chopped walnuts

Directions

  1. Preheat oven to 350°F. Put 12 cupcake wrappers in a muffin tin.
  2. In a small saucepan, melt the Earth Balance over medium heat. Stir in the maple syrup and apples, and sprinkle on the cinnamon and nutmeg. Cook apples for 10 to 12 minutes.
  3. While the apples are softening, in a large bowl, beat together the oil, sugar, vanilla, egg, applesauce, and vanilla soy milk.
  4. Combine the remaining ingredients in a small bowl, except for the nuts. Then pour it into the bowl of wet ingredients, mixing well.
  5. Fill a quarter of each muffin wrapper with the batter. Spoon apple mixture into the center of each (do not spread). Top with remaining batter. Sprinkle with a few chopped walnuts. Bake for about 20 minutes or until a toothpick inserted comes out clean.
