This dessert is really not all that guilt-inducing. Honest. It's loaded with fiber, thanks to just about every ingredient, and omega-3s, the essential fatty acids responsible for improving heart, brain, joint, skin, mental, bowel, and almost every other kind of health one could possibly imagine. And it tastes good. Total win-win.

Ingredients:
2 1/2 pounds tart apples (6 large) — peeled, cored, and thinly sliced *
1 cup cranberries *
1/4 cup grade B maple syrup
1 1/2 tbsp. ground cinnamon
1 tsp. ground nutmeg
1/2 cup rolled oats *
1/3 cup whole wheat pastry flour *
1/4 cup golden milled flaxseed *
1 tbsp. chia seed *
1/4 cup light packed brown sugar
1/4 tsp. ground cinnamon
1/3 cup unsalted butter, cut into pieces
1/2 cup chopped pecans *
* = good source of fiber
Directions
- Preheat oven to 375 degrees. Grease glass baking dish (11" x 7") with butter or virgin coconut oil.
- In a large bowl, combine apples, cranberries, maple syrup, cinnamon and nutmeg. Place evenly into baking dish.
- Using the same bowl, combine oats, flour, flax, chia seed, brown sugar, and cinnamon. Using a fork, mix in butter until it becomes crumbly. Stir in pecans, and sprinkle over apples.
- Bake in preheated oven for about 45 minutes, or until topping is golden brown and apples are tender.
- Serve with a small dollop of organic vanilla ice cream (optional) and enjoy!
