Soccer on this side of the Atlantic uses different lingo than our English-speaking allies — most obvious is the name change from football since we have our own homegrown game of the same name. "Booking" isn't a special British phrase, it's used across all countries and levels and you'd hear it even watching 9 year old Americans play because the referees write the offending player's name down in a small notebook to record the name and time of the offense warranting the card.
