PS: How many calories do you eat per day?
GM: I eat about 2,000 calories a day.
PS: What's a typical day of meals and snacks?
GM: I start each day with eight ounces of water before my feet hit the floor. Then, I have coffee with coconut milk and stevia. Most days, I eat Fage Greek yogurt with fresh blueberries and granola, but one to two days a week, I will have an egg white omelet with spinach and any other veggie in the fridge I can find. If I need something before lunch, I have a Quest Nutrition Bar. I am addicted.
Lunch is usually a plate my husband has prepared the night before like grilled fish or grilled veggies and a salad. I am super busy in the afternoon, but if I get a craving I usually have two to three cups of Angie's Popcorn or two to three tablespoons of hummus with carrot chips! Dinner is hardest for me because I am not hungry. I sometimes just have grilled veggies or sautéed spinach (my favorite) or roasted asparagus or broccoli. If I have protein it is grilled chicken, shrimp, or fish. I do not eat any red meat and haven't for a few years.
PS: How do you strategize for meals out?
GM: Eating out is still very hard for me for many reasons. One is that I am usually recognized, and people will stop by and ask what I am eating. It is never really exciting but still makes me uncomfortable. I love talking to people anywhere and anytime, but I'm just not used to being watched [when I eat].
It's also very expensive. I am self-employed and have two kids in college. My husband and I love to be in the kitchen and enjoy cooking together much more than restaurants . . . and finally, I cannot control the preparation of the food. I can ask but really never know if the food is prepared as ordered. So with all that being said, if I'm in a situation where I have to eat out, I will order a salad with no dressing and usually grilled fish. Pretty boring, right?
PS: What are the healthy staples that are always in your fridge?
GM: Always Fage Greek yogurt, raw spinach, carrot chips, and hummus.
