Apple Ring Oatmeal Pancakes

INGREDIENTS

    • 3/4 cup whole wheat flour
    • 1/4 cup rolled oats
    • 1 tablespoon brown sugar
    • 2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/2 teaspoon salt
    • 1/2 banana
    • 1 cup soy or almond milk
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 3 apples, washed, cored, and each cut into six slices

    INSTRUCTIONS

    1. In a medium bowl, mix together the flour, oats, brown sugar, baking powder, cinnamon, nutmeg, and salt. In a small bowl, mash the banana. Add the milk, egg, and vanilla; beat until thoroughly combined.

    2. Add the dry ingredients to the wet, and mix until just combined. The batter should be on the thinner side.
