Carbs are much maligned these days and potatoes are often the target. But who doesn't consider mashed potatoes or french fries comfort food? Though they might just be the reason for the potato's bad reputation since both foods turn the spud into a vehicle for fat.
If you take away the butter, sour cream and cheese often heaped on a baked potato, what you have left is an is an exceptionally healthful low calorie, high fiber food containing antioxidants that offer protection against cardiovascular disease and cancer.
Not only is the potato high in vitamin C it is also a good source of vitamin B6, as well as the minerals potassium and magnesium which both help prevent muscle cramps. Plus potatoes are high in dietary fiber. But you have to eat the skin!!! That is where the fiber is.
So, if you're like me and crave baked potatoes on cold winter nights, I say eat them and let all those carb free folks be damned.
Here are a few alternatives to overplayed toppings like sour cream and butter: salsa, pesto, soy sauce and steamed broccoli, sauteed onions (in olive oil, of course!) caramelized with a little balsamic vinegar and some lightly toasted walnuts.
YUM. I know what I am having with dinner.

I also read in the book You! The Diet to put marinara sauce on...but I haven't tried that one yet. I also imagine that sauted mixed veggies would be a good add as a topping....I'm all in.

3i use butter sparingly on my baked potatoes. i love to brush on extra virgin olive oil on the skin before i bake! i can't live without my sour cream on my baked potato, so to keep my intake down, i dip my fork with the bite of potato on it in the sour cream which ends up using less of the (fat free!) sour cream. i think i get the best of both worlds: taste and less (though not the lowest amount of) calories.

When I miss butter on baked potatoes, sometimes I drizzle a little bit of extra virgin olive oil on and a pinch of salt...does the craving-trick for me!!
5yeah, soy sauce sounds a little gross! I like mine with just a little reduced fat sour cream, and lots of chives on top, yummmm!!!

I think I'd prepare
this with a light olive oil on the skin. Then have sauteed onions and mushrooms (olive oil). Deeeeelish!!
9I really don't care for sour cream, but I usually put Weight Watchers cheese, bacon bits and hot sauce on my baked potatoes. Sometimes I like to add the leanest deli ham I can find and black olives.
10I just ate my baked potato (which I grew in my garden and dug up just a few days ago) with olive oil, tons of chives and parsley, salt, pepper, and like 3 cloves of garlic i put thru the garlic press.... and....it....was....a bangin' tater.
