The orange flesh of winter squash is not only a visual delight (orange is my favorite color), but it is also super good for you.

Loaded with beta carotene, the antioxidant that gives the squash its color, and fiber (5.7 grams per cup), acorn squash is an excellent addition to many meals and it is oh so easy to prepare. You simply:
- Cut the squash in two, scoop out the seeds
- Brush the sides with olive oil
- Sprinkle with salt and pepper
- Bake face down on a rimmed dish for 30 minutes at 400 degrees
- Flip squash to brown the insides by cooking for another 10 - 15 minutes
Easy peasy! There is a also no reason to send your squash into the oven naked. You can adorn it with many tasty spices. Here are 5 different ways to prepare your acorn squash, just add these toppings when you flip the squash.
In each squash half spread one of the following toppings:
- 1/2 teaspoon honey, then sprinkle 1/2 teaspoon curry powder
- 1/8 cup bread crumbs
- 1/8 cup finely grated Parmesan or Asiago cheese
- 1 tablespoon coarsely chopped pecans with 1/8 teaspoon cinnamon
- 1/2 tablespoon maple syrup

mmmm. Somtimes I cook it plain, then bring some to work for lunch. I microwave it at work and add some salt and some splenda for a salty/sweet autmumny taste. low cal lunch that fills me up!
1acorn squash + olive oil + salt = crazy delicious!
2I don't go for acorn, but kabocha squash! I half it, clean the seeds out, cut it into cubes and simmer it in 2 1.2 cups of water with 2 tbsp of low sodium soy cause (Kikkoman's Ponzu SS is my fav.) until it's tender. Soooooo good!
3i eat squash all cut up and cooked in a casserole with cheese and little pieces of bacon. it's really good and if you don't use a lot of bacon and you do use low fat cheese, it's not too fattening.
4a little olive oil and pumpkin pie seasonsing
5Place in baking dish in hot oven. Cook till it's collapsed. Crack it open, take out the seeds, scoop out the roasted yummy squash and enjoy with just a pinch of butter and salt. Winter squash is soooo good, it totally doesn't need anything fancy.

8Usually I sprinkle freshly ground pepper on the olive oiled squash flesh, but I am eager to try the Parmesan cheese and the honey with brown sugar.
9My FAVORITE way to eat acorn squash (I made it just last week):
- Sweat half an onion, garlic, and 3 carrots, chopped into teeny little cubes, in olive oil.
- Add one package frozen spinach, chopped fine, and a cup or so of brown rice.
- Add any of the following: raisins, walnuts, pine nuts, cranberries...
- Season with salt and pepper, and some red pepper flakes if my bf's eating.
- Spoon the mixture into the hollow of the squash, put the tops back on, and bake for a half hour.
YUM!!
10I love to cook it as directed and then add either fresh diced apple or no sugar added apple pie filling. It tastes like fresh hot apple pie. If you were to add a little brown sugar on top it'd be a delicious dessert.
