I always thought Brussels sprouts were kind of a joke vegetable. You know, something you heard on that show Leave It to Beaver, where the mom would say "eat your Brussels sprouts, dear." I didn't think people actually ate them though — that is, until I went to a dinner party last weekend.
I saw these strange little baby cabbage-looking things on the table and was momentarily stumped. She actually was serving Brussels sprouts, and let me tell you, they're really delicious. I'm no longer put off by this tiny vegetable. Plus they're healthy too. Half a cup of cooked Brussels sprouts has only 33 calories, but also has 3.2 g of fiber, 252 mg of potassium, 79 micrograms of folate, and 2.8 g of protein. Since it's a green veggie, I thought it would have a ton of calcium, but it only has 19 mg, and the recommended daily intake is 1,000 mg. Still, it does have 35 mg of vitamin C and 457 IU of vitamin A, which surprised me, so that's a plus.
I think most people hate Brussels sprouts because they are usually way overcooked, so they have no taste and a gross mushy consistency. They can also have a slightly bitter flavor, but if they're prepared the right way, this green veggie a great side dish to any meal.

I found this recipe on a little sheet they were handing out at my local health food store and it's so good.
What you'll need:
2 pounds Brussels Sprouts (rinse and trim the tough outer leaves and base)
3 tbsp extra-virgin olive oil
2 tbsp maple syrup
Salt and pepper to taste
2 tbsp chopped parsley
What to do:
- Preheat the oven to 400°F.
- Cut the Brussels sprouts in half lengthwise.
- Mix them in a bowl with the olive oil, maple syrup, salt and pepper.
- Place them on a non-stick baking sheet and bake them until the sprouts are tender, about 15 to 20 minutes.
- Serve them in a bowl with sprinkled parsley.

2I love Brussels Sprouts! I hadn't tried them until recently, but now they are among my favorite veggies. They're delicious when roasted. I prepare them almost the same as above, but I skip the maple syrup and just use olive oil. Yummy!
3LOVE THEM! My son does to. I love the looks on the produce guy's face when we buy them. They think my kid is crazy because he goes bonkers over them. SOOOO good.
I simply score them on bottom and steam in lemon juice and garlic. Top with a little parmesan and presto!

9I've recently been eating a lot of brussels sprouts. they are great pan fried in a tiny bit of olive oil and a couple cloves of garlic. if cooked right, they will taste nutty and earthy.

11roasted brussels sprouts are delicious! they have to be roasted, though. any other way and they have that yucky sulfurous flavor and smell.
12Its so funny that you mention this! I was having a conversation about 2 hours ago about how I don't think I've ever actually *had* a brussel sprout. I would know what they are if I saw them.. but I don't believe I've ever put one in my mouth.

13I've tried really hard to like brussel sprouts sooooo many times. I just can't seem to ignore the bitter taste even after dowsing them with melted butter and Lemon juice.
14i think roasted brussel sprouts are my favorite winter vegetable treat -- but i would cut out the maple syrup (that way you don't add sugar) and put in some fresh garlic (whole, sliced, chopped, whatever) -- also i halve or quarter them depending on the size so when i roast them some of the leaves become crispy and tangy.
everyone should try them once this way -- you'll change your mind about the little fellas for sure. . .
15I've ALWAYS hated brussel sprouts, until I tried roasting them in the oven with a little bit of olive oil and sea salt drizzled over them. Now I think they're delicious!
16Oh, and starting with *fresh* brussel sprouts, obvs... If you buy them fresh and cook them soon, they are really not bitter at all. They get bitter over time.
17I *love* brussel sprouts... plain, lightly steamed... delish!! Tho they do stink to high heaven, the taste is divine.

22No need to learn to love them - I already do. I just get fresh one cut them in half, toss them with a wee bit of EVOO, kosher salt and fresh black pepper then throw them in a 375 degree oven for 15 minutes. And yummy.
I even like frozen ones.

24I don't need to LEARN to love them; I already do!! They are so yummy!! I like them with a little lemon and a bit of dill. Careful with any veggies...slathering them with butter or tons of cheese adds so many calories that it sort of cancels out the benefits.
25they are definitely on my top five favorite veggies list!!! i use 101cookbooks method of pan roasting... fantastic! my husb and i eat fresh ones about once a week, and take frozen ones to work about the same.
26YUMMY YUMMY SPROUTS:
Frozen or fresh sprouts
2 T olive oil
1/4 cup balsamic vinegar
1 T (roughly) fresh thyme leaves (pull from stems)
A couple cloves of smashed garlic... just for a little flavor
Mix

36I hated them as a kid. They were bitter and just "baby cabbages". Now I love them. I cook them with turkey bacon and in chicken broth. Then I add a lot of black pepper. Delish!

I roast mine in the oven, slice them in half, toss with some olive oil and balsamic vinegar. .....ah so good
38i love brussel spouts. i always have. they were one of my favourite things my mom would cook when i was a kid. but then they were never over boiled or plain. my mom used to make them either in a light butter and garlic sauce or with a bit of cheese sauce or grated cheese melted on them. being a vegetarian, i rely on these types of green veggies to get my 8 essential nutrients. just works in my favour that i love them. Yummy
39I don't know how it happended but my sisters and I have loved them since we were little and my mother hates them. She never served them until we started asking for them.
40Ugh, I recently retried Brussels sprouts (roasted with olive oil & salt). They just tasted like nasty hot cabbage.
41My mom never used to cook brussel sprouts when I was little, so I thought of them in the same way: as a mythical super-disgusting vegetable used to punish bad kids by Stepford-wife moms. When I tried them as an adult, I loved them!!! I don't know many great ways of cooking them; I generally just stir-fry them in a little olive oil + butter with some chopped onions. But thanks for the great recipe, I'll be sure to try it.

43My grandmother started serving them to me as soon as I could eat solid foods - she'd even mash them up with potatoes. Since then, I've requested them every winter and for Thanksgiving!
44Brussels sprouts are definitely better fresh, not frozen (they get mushy). I love mine sauteed with pancetta/garlic, onions and EVOO. Yummy!
