It's pronounced "Keen-wa" and it's known as "The Mother Grain." It's a great alternative to your traditional Thanksgiving stuffing. The original will fill you up quickly, leaving no room for dessert. It is also super high in protein - 1 cup of Quinoa contains a whopping 22 grams of protein, while the usual breadcrumb stuffing has about 1 gram. Quinoa Stuffing
You'll need:
4 med. yellow onions, chopped
1 large red pepper, chopped
3 garlic cloves, minced
½ tsp of sea salt
2 tablespoons olive oil
2 cups of rinsed Quinoa
4 cups of water
2 vegetarian soup stock cubes
Add finely chopped onions, minced garlic, and salt to olive oil in a wok and sauté until onions are slightly brown. Then add chopped red pepper and continue to sauté until onions are caramelized. Add water, stock cubes and rinsed quinoa and bring to a simmer. Stir once after five minutes then simmer for 35 minutes or until water has been cooked in.
Fit's Tip: Throw in other veggies for even more fun. I like celery, yellow peppers, peas, carrots, zucchini, and tomatoes. Might as well throw some cooked beans in there too for some added protein (as if quinoa didn't have enough as it is).

1I've never heard of this, but I'm open to trying it. Looks like small grain brown rice.
2I like quinoa though I've only prepared it in a pre-boxed variety where the directions are very simple. It has a chewy type texture similar to rice and you toast the grain before you cook it which enhances the flavor. I highly recommend trying it if you like brown rice and couscous.
3Yes indeed, don't use too much water, it's very alike brown rice. I like it. You can prepare it sweet also, like rice pudding, replacing all the sinful ingredients, like skim milk and alternative sugar. Very healthy.

5My SIL makes this stuff all the time! She said its pretty much the highest concentrated protein you can get.
6Yeah, it's got a nice flavor plain, but you can add flavoring too. I use it as a rice substitute all the time when I make curry. It cooks faster than brown rice and has much more protein. It looks really cool too. Each circle has a little tail. My friend thinks it looks like sperm, but it really doesn't. What do you think?

9Sorry about the sperm thing. Don't let it stop you. Quinoa is the mother grain. It's been around forever for a good reason. It's not dry at all. It's a little chewy, like slightly under-cooked rice. But it doesn't taste under-cooked. I love the texture and it's so good for you.
10Quinoa truly is wonderful, and can be spiced up in all kinds of ways. There are lots of great quinoa salad recipes floating around out there - green onions, red pepper, cucumber, cumin - very yummy! I'm excited to try this stuffing recipe.
