What is not to love about the blueberry? Low in calories and high in antioxidants, blueberries definitely fall into the super food category.
Blueberries are high in antioxidant phytonutrients called anthocyanidins. You may not be able to pronounce that word, but let me tell you what it does. This antioxidant is an anti-bacterial pigment, which has a beneficial effect on blood vessels and the treatment of varicose veins. Blueberries also contain tannins, which act as astringents in the digestive system to reduce inflammation. Blueberries also promote urinary tract health, since they contain the same compounds found in cranberries.
Personally, I like blueberries just about any way you can serve them: fresh and unadulterated straight out of the basket, on cereal, in muffins, distilled into a compote and ladled over ice cream whole wheat pancakes. This delicious berry is in season right now, so get them while they are tasty and affordable.

11Frozen Blueberry Yogurt pops all the way! (one cup of milk, one cup of non-fat vanilla yogurt, 2 cups blueberries blended in the blender with a little sugar, about 1/4 C then freeze) They are easy and a great summer treat and make for a suitable ice cream substitute in my book!

I have them in my homemade fruit smoothies almost every nite. The only time I don't have them is when the store carries blueberries from outside the U.S.
33i absolutely love eating blueberries. as a snack, in my cereal, yogurt, muffins, pancakes, never tried with ice cream but sounds delicious!
