1I think the pre-planning part is really key here!
2I always go to Whole Foods before heading out on the road, and stock up on lots of healthy, pre-cut, pre-packaged, healthy, low-fat snacks! I also fill up multiple water bottles and throw them in the back seat. I love snacking while I'm driving, but I feel okay doing it when all I have are healthy options.
3I think it's important to bring healthy food, but it's also okay to sneak in one fave snack so that you're not depriving yourself.

5I try to stock up on healthy snacks for day, road or air trips. At a lot of places, the foods offered just aren't that good and I mean taste wise. I drove across the country last summer and the choices were pretty limited.
6i always pack bananas and banana chocolate chip muffins in the car as i can eat them and drive at the same time without much loss of concentration. pretzels and carrot sticks are good too.
