Carrot Zucchini Bread

Ingredients
1 1/2 cups whole wheat flour
2 tablespoons ground flaxseed (flax meal)
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder
1 egg
1 cup Sucanat (or sugar)
1/4 cup brown sugar
1/2 cup oil
1 teaspoon vanilla
1 1/2 cups grated zucchini
1/2 cup grated carrots
Directions
- Mix dry ingredients in a bowl and set aside.
- In a separate bowl, beat egg and add sugars. Then add oil and vanilla and mix until smooth.
- Stir in vegetables. Then mix in dry ingredients.
- Pour into greased bread pan. Bake 45 to 55 minutes at 350° F until an inserted toothpick comes out clean.

1I'm not a fan of zucchini bread.
2that looks terrible. To me, desert is like a trophy wife, looks matter more then what's inside.
3Nice recipe and love the absence of nuts, but I'm not feeling the end product.
4I think the WW flour and flax make the bread look like a mud pie.
and it looks too dense.
5I'd up the baking powder to at least 1/2 tsp and maybe whip the egg white +1 to soft peaks and then fold it into the batter to lighten it.
I am totally trying this. I LOVE zucchini bread and carrot bread so I'm sure I'll love this too. Does it need that much sugar, though?

7As a vegan, can you substitute the egg for something else?
8ha I have to agree with a lot of the other commenters. if I wanted to be healthy with dessert I think some mixed berries and cool-whip in a pretty tray would be more appealing.
9It doesn't rise, because there doesn't seem to be anything for the baking soda to react with (ie yogurt, sour milk, etc.)

11Of course it's gonna look icky before it's baked. This was delicious!! I added 1/4 LESS cup of white sugar, added 2 Tbsp. natural applesauce, used egg white, and tossed in some raisins for good measure. This was moist, very flavorful, and got rave reviews in my house. Don't overlook this recipe because of a picture of the unbaked result. Bake it yourself, and be sure to pack this healthful treat in your kids' lunchboxes, too. You'll see!

13Even banana nut bread batter looks "yucky." I have been baking this recipe for years before the flax seed craze, and everyone has enjoyed it at Thanksgiving and for breakfasts. So, give it a go, or bake.

How to Replace Eggs with Flaxseed Meal:
Step 1
Add 1 tbsp. flaxseed meal to 3 tbsp. water.
Step2
Allow flax meal to absorb for 3 to 5 minutes.
Step 3
16Use this flaxseed meal and water mixture to replace 1 egg.
I made this on Saturday and it is delicious! I will definitely make this again and maybe add some nuts and/or raisins.
17Sounds yummy! I will try this, but will probably try using 1/2 cup sugar or another natural & healthy substitute....I will also use a glass baking dish and skip the Teflon...nasty!
