Salads are one of my favorite meals because they're low in calories, full of vitamins, nutrients, and fiber, and they taste so fresh. Veggies aren't terribly high in protein though, so I like to add tofu to mine. A half a block of tofu contains 22.5 grams of protein. Plus it's so easy to cook up, you can make a bunch and store it in the fridge for the week.

1. Gently squeeze a block of tofu between your hands or two plates to get rid of extra liquid.
2. Dice the tofu and saute on medium heat for about 15 to 20 minutes with olive oil, salt, pepper, and a little garlic. Stir often so all sides of the small cubes get slightly browned.
3. Store leftovers in an airtight container in the fridge.

Soyboy's tofu lin is really good in salad. I like to mix hot (stir fried or steamed) veggies with cold veggies with tofu and pumpkin seeds over organic spinach... my absolute favorite meal!
1I'm super impressed by ppl who can eat tofu. I wanted to try it but the texture just made me gag. I guess I'll stick with my veggie like meat products.
2This is a great idea, I love cooking in advance to throw together something quick and healthy when I am too tired to cook. Also I really liked dunnonuttin's suggestion, I am going to have to try that too!
3I wish I liked tofu, but I really just don't. Something about the texture kind of bugs me. The only way I'll even eat it is if it's pureed into a smoothie.
