Ranch, blue cheese, and thousand island might make your taste buds happy, but they're pretty disappointing when it comes to nutrition. If you've been trying to fool yourself into thinking that a concoction of vegetables and saturated-fat-laden creamy dressing is healthy, it won't take long for your waistline to notice.
Enter your salad and weight-
friendly dressing, the vinaigrette. A medley of olive oil and vinegar, seasoned as you please and moderately portioned, is the best way to complement your greens. It's tasty, and what's more, new research from Japan suggests that ordinary household vinegar turns on genes that help fight fat.
Scientists put mice on a high-fat diet, and only some were given regular doses of acetic acid, the main chemical in vinegar. The mice who received the vinegar compound developed up to 10 percent less body fat than the mice who didn't receive it. Scientists believe that the acetic acid helps the body break down fats, which prevents fat buildup and weight gain.

Yoox
My mum and dad had always prepared salads with a balsamico-olive oil vinaigrette so I'm glad I never had to get used to joghurt/cheese/whatever dressings. I actually prefer a vinaigrette it since it makes the salad taste like salad, and not the dressing...
1delish!
2I have been trying for years to enjoy my salads with a vinaigrette and no luck. I have tried all sorts of kinds and I really just don't like the taste of the vinegar I think. I instead use cottage cheese, or else mix low-fat dressings with plain yogurt. It's not the best, but it's the best that I can do.
3I guess the apple cider vinegar weight loss diet is not so far-fetched after all....
4I can't bring myself to give up creamy dressings. As I'm typing this now I'm enjoying a huge garden salad with egg whites and 2tbls of low fat blue cheese dressing. At only 40 cal, I feel OK with my creamy dressing choice
Also, Trader Joes has a low cal cilantro dressing
that is to DIE for. Yum!
5Very cool. I love vinaigrettes and vinegar in general.
6i put basalmic vinegar on my salads, no oil and no vinaigrette. just straight b.v. it adds flavor with hardly any calories at all.
7I make my own viniagrette with olive oil and red wine vinegar all the time. It's pretty good and I don't use as much oil as the kind you'd buy in the store.
On another note...the other week at the grocery store, I saw the woman in front of me put one head of iceberg lettuce and one cucumber on the conveyor belt along with four bottles of Ranch salad dressing. I was thinking maybe she was stocking up or something, but I kind of think that all of those bottles of dressing were for that one little head of lettuce and cucumber. It kind of grossed me out...too much dressing wrecks perfectly good salads.
8Of course mice who have vinegar pumped into their stomachs are going to lose weight. It means nothing for humans who splash it on their salad.
