Butternut Squash
Brighten any Winter meal with
butternut squash. A half cup of the wonderfully orange veggie contains 5 grams of fiber, as well as copious amounts of vitamins and C. In season now, this squash is featured in my
Butternut Squash and Carrot Soup. You can also find this squash already chopped in many grocery stores, which takes the knife work out of your preparation.
