What's a Thanksgiving meal without a slice of tasty pumpkin pie? Even though this dessert is technically made with a vegetable, it's traditionally high in saturated fat because of the butter used to make the crust, the whipped cream or condensed milk, and not to mention eggs. More than a few of you asked for a pumpkin pie alternative and here's a lowfat version made with silken tofu (to add protein and creaminess), and a pre-made graham cracker crust (it's lowfat and also makes your life easier).

Ingredients
1 can (16 ounces) pureed pumpkin
3/4 cup sugar or Sucanat (or 1/2 cup maple syrup)
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
3 tablespoons cornstarch to firm up the pie filling
1 package (10-12 ounces) silken/soft tofu
1 9 inch graham cracker crust pie shell (I used one from Arrowhead Mills)
Directions
- Preheat oven to 425° F.
- Mix the pumpkin and sugar. Add salt, spices, cornstarch and tofu, mix thoroughly.
- Pour mixture into pie shell and bake for 15 minutes.
- Lower heat to 350° F and bake for another 60 minutes. Chill and serve.

i just don't know how i feel about tofu in my pie...
1Angela- silken tofu is tasteless in desserts. It just adds a creaminess. I use it to make brownies and chocolate mousse.

3Krae- Go get Vegan Cupcakes Take Over the World! They have the best effing cupcakes I've ever tasted and they're free of milk. I also have another vegan baking book, but I can't remember the title right now. I think it's something obvious like "Vegan Baking." =)

6For goodness sake! The reason it's a holiday classic is because it's delicious. I'd rather have small helpings of the traditional food and load up on veggies at dinner than second helpings of tofu substitutes.

9I'm actually eating some of this pie right now! I made it last night from this exact same recipe which I happened to find online. It's really good. I'm a vegan so I've been eating tofu pie for years and no one can ever tell.
One thing--the cornstarch is not really necessary and makes it a little gummy, whereas it should be more creamy inside. I might even cut down the sugar a bit as mine is really sweet.
Also, I often make it with no crust if I want it faster or healthier. It tastes just as good.
You guys should totally try this. I even eat it for breakfast, but I loooove pumpkin.

11Sounds kind of yummy. I make a really yummy pumpkin custard for Thanksgiving...it's very similar to pumpkin pie, but you don't get the crust and I use only one egg and I cut way down on the evaporated milk. It's very pumpkin-y and not very sweet, so if you like your pumpkin pie really sweet, it's probably not for you.
12No offense, but this just doesn't even look all that appetizing, regardless of what side of the fence your on about tofu substitutes.

17You know, it's pie. Pie is supposed to be loaded with fat and sugar and deliciousness. It's pie. If you don't want to eat "bad" pie, don't eat it. Making pie healthy just seems....wrong.

21I make tofu pumpkin pie because I'm vegan, NOT because I'm looking for something healthier. I agree with a lot of the people posting here, I think its kind of ridiculous to concern yourself with the healthfulness of your pie (which will never be healthy no matter what, think about all the sugar...) on a major holiday like Thanksgiving. Just enjoy yourself.
That said, if you or someone you know is vegan or has some kind of food allergy on Thanksgiving, then this pie would be a great option. Or if you're looking to experiment with something sweet when you get a craving one random night, try it out then. But don't try to healthif-y your Thanksgiving meal!
For the record, all the posters who are anti-tofu should try this pie, because its really good. You don't taste anything but pumpkin pie filling. I've never tried this particular recipe. But for anyone interested in vegan (NOT healthier really, trust me) baking, you should check out "The Joy of Vegan Baking" by Colleen Patrick Godreau.

23I am one happy vegan too and I absolutely look foward to making this pie and putting it next to my mom's frozen Pumpkin pie. I totally agree with Foxie why not a dessert be healthy and delicious? I swear if no one told you there was tofu in it, you wouldnt know the diff. Plus, the japanese and chinese have been eating soy for thousands of years and they have more longevity and better health than us. I also rather not have my food suffer for me.

25Well even if the argument is "you're supposed to let yourself go on holidays!"... it's nice to have an alternative so people who are lactose intolerant or allergic to eggs can feel included :/
