I really do love avocados. I might even marry one, that is how deeply I adore this veggie, or technically fruit - but an avocado in any other category would still be just as creamy and delish.
Spring is the season when avocados are at their peak, but since they are grown in California (primarily Hass variety) and Florida (mostly Fuerte) there is usually a decent supply all year round. Since this is their season, I am hoping to see the price fall a bit, because in the off season avocados may be available but pricey.
Aside from their exquisite taste and texture, avocados are chock full of wonderful nutrients. They are high in vitamin K, potassium, and dietary fiber. I love that this smooth textured veggie contains fiber - about 3.5 grams per half cup - a wonderful surprise, I know.
Avocados also contain oleic acid, a monounsaturated fat, the good kind of fat since it may help to lower cholesterol. Plus, oleic acid has recently been shown to offer significant protection against breast cancer - always a bonus for the ladies. Another reason to add avocado to your salad is that it increases your body's ability to absorb the health-promoting carotenoids that vegetables provide. I love that there are so many reasons to add one of my favorite foods to everything.
I suggest adding avocado to your sandwiches, salads, even spreading it on toast in the morning - that is when I refer to avocados as vegan butter. Plus there is always guacamole. Here's a tip from YumSugar on how to avoid yucky avocados.

I love me some homemade quacamole! (Okay, fresh avacados with the seasoning packet, but tonight I'm acutally making pico de gayo to mix in).
My mom is a Cali girl and grew up up eating avacado like you do, but all she managed to pass on to me was the guac love.
1OMG I love avocados with just salt and a little bit of lemon juice! sometimes I even add some black pepper......the ones that you find here even if they come from Mexico they are small compare to the ones that grow in my country

3Ohh I do love the guac, but I have to say my favorite way to eat them is on a turkey sandwich in place of any mayo or mustard!
4My favorite Mexican place makes guac at your table and I swear they make it with crack or something, because it is sooooo good, and so much better than any I've ever had anywhere else.
I made salsa with tomatoes, chopped avocadoes, onions, Italian dressing and a dash of curry powder. SO GOOD. I put it over some baked chicken and it was fantastic.
5i grew up (cali) on toasted avacado sandwiches. Mash avacado with mayo, and a little chopped onion. spread on toast and enjoy. YUMMY! i also love guacamole!
6I love eating half an avocado with cottage cheese or the way my grandmother serves them with shrimp, sour cream and a bit of lemon. Yummy.

8I love avos. Here is my recipe for best turkey sandwich ever:
Toast good whole wheat bread.
9Put dijon mustard then sharp cheddar cheese slices on one piece of bread.
Spread about half of a ripe avo on the other piece.
Puta hew slices of good honey turkey in between the two slices and enjoy.
Avacado with grapefruit is amazing. Chop them up together or make it pretty and alternate matching wedges of avacado with grapefruit wedges. It doesn't even need dressing.
10I love avocados and will eat them with pretty much anything. My favorite snack used to be toast with smashed avocado & thinly shaved red onion. I love cutting an avocado in half and filling the hole with balsamic vinaigrette - delish! I also found a recipe for grilled chicken with avocado & strawberry salsa. It was the best summer dish!

12I LOVE LOVE LOVE avocados! They are by far my favorite fruit. I will never tire of eating them straight. Cut in half, a sprinkle of salt, a dash pf pepper, and pure deliciousness. According to my dad, my mom used to put a small dollop of mayo in the center, but that image is cringe-worthy to me. Why ruin it!?!
13One of my favorite avocado snacks (also a great appetizer or side dish)is sliced avocado and sliced beets drizzled with a bit of lemon juice, balsamic vinegar, and salt and pepper. The flavors and textures of the beets and avocado go so well together and you can't beat the nutritional value!

Avocados on toast instead of butter.. hmmm.. Interesting!! I will have to try. I love avocados in my fajitas or eaten with salsa and tostitos.
Back at home, my parents have an avocado tree and for a tasty treat they mush the avocados with
some milk and sugar. Delicious!

I LOVE avocados - I have them in salads, sandwhiches, on their own - on their own they are great as a side dish with some salt & pepper, lemon juice (or red wine vinegar) and a dash of oil - sensational!!!!
19I love 'em in salads and sandwiches. Also, I like mushing up avocados and mixing it with soymilk and honey. I sounds/looks disgusting, but I've been eating it since I was little and think it's pretty damn good!

21i love homemade guacamole and use the left-over for a sandwich! Toast your favorite bread (a good rye or pumpernickle work). On one slice of toast put on a piece of your favorite cheese ( i like a combo: 1 piece of munster & colby) so it gets nice and melty. then on the other slice of toast put some of the guac on and top with some bean sprouts! Best sandwich ever!
22I like to chop a half up and spread it on bread with some yellow mustard... my favorite sandwich!
