Since fresh corn is still in season but won't be for much longer, why not use it to make this quick and simple dish. Honestly, it'll only take you about 15 minutes to make it. It makes a great side dish, a topping on burgers, or I like to scoop it onto my garden salad.

Corn and Black Bean Salad

Ingredients
1 can black beans, rinsed well with cold water
1 cup fresh corn (or corn from 2 ears)
1/4 cup chopped fresh cilantro
1 tomato
1 tbsp extra virgin olive oil
1 tsp cumin
1 clove minced garlic
salt and pepper to taste
Directions
- Pour the black beans, corn, and tomato in a bowl.

- Now add the chopped cilantro.

- Now add the chopped tomatoes and the olive oil.

- Now add the garlic and cumin and stir it until well mixed. You can enjoy it immediately or put it in the fridge for later.

I've been throwing something like this together too, except I add red onion and somekind of pepper and skip the garlic. Plus I add a dash of red or sherry vinegar.

6This sounds like something I make all the time, except I throw in three cans of beans (mixture of black beans and kidney beans - pinto also works), more garlic and cumin, lime juice, red onion, diced jalapeno, red and yellow bell pepper and white wine vinegar. I top it with some chopped avocado and lime juice and serve it over brown rice. It makes quite a bit of food and it's super easy! It tastes even better when it's been in the fridge for a while and has had a chance to absorb some of the flavours.

16i make a dip like this but add green peppers chopped and like half a cup of balsamic vinaigrette. it is so good with chips, veggies, anything.
