
When you're trying to watch what you eat, brown-bagging it at work is a huge help. But let's face it: Not everyone has time to pack a lunch every night or morning before work. So why not start a lunch club at your office? It will help you eat better and encourage your co-workers to do the same.
Recruit a few of your officemates to join the club; anywhere from two to six members is a great start. Each week, assign each person to bring an ingredient for sandwiches or a smart salad. One person brings lettuce, or someone buys a loaf of bread, another member provides cold cuts, and so on. Then, every day, you can toss up a big salad to share, or let members make their own sandwiches with the provided ingredients.
If you want to get fancier, take more of a potluck approach. Have each person bring a different dish each day — anything from pasta salad to stir-fry — that everyone can eat for lunch. That way, each person only has to worry about lunch once a week.

i think that in the perfect work environment this could be a great thing. first off you don't have to really prepare all that much stuff - just one little thing that you know is healthy and 'easy' and 'inexpensive' and if you have 3 people or so who can do it - then what's better than that?
in my office though, we have such odd tastes for food, and i think that it's sometimes hard for us to all figure out time to have lunch near the same time that it wouldn't work. (i also don't have that kind of relationship with my co-workers for it to be worthwhile)
1My friend and I used to do something like this...We would just trade weeks making lunches. One week would be my turn and usually I would only have to buy like $15 worth of stuff for both of us for the whole week. By the next week you are super excited to see what the other person is going to make so you don't get bored with homemade lunches! and on Fridays we treat ourselves and eat out
2Before I went back to school, I did something similar for a few office mates. We'd take either Monday, Wednesday, or Friday, and we'd make and bring lunch for everyone. That way if we had something we wanted to get for ourselves from takeout, we had that option two days a week. We got to share recipes, which was awesome, too
3It would be difficult for me to do since I'm a vegetarian and the people at my office are tofu-phobes--they think most of the meals I make aren't as good as those with meat. But I bring a lunch almost every day.
4I guess I can call our department a "lunch club" (even the big bosses join in) but we don't exactly eat healthy food all the time.
5My mother and I work together, so I'm getting more strict on her about this. It's usually her bugging me about it, but I'm on a role right now. (She ate out today so I made her listen to me about it. I didn't feel it was fair when I brought stuff to make for us.)
