Somewhere between leaving home after high school and graduating college, I toyed with the idea of giving up gluten, a protein found in wheat, barley and rye. So many people I knew were living gluten free lives and claimed to feel so much better for giving it up. In fact, gluten free living seems to be on the rise.

Doctors estimate that one percent of the US population has Celiac disease, an extreme intolerance to gluten, but according to food marketers upwards of 15 to 25 percent of food consumers (that's you and me) want gluten free foods. Many see eating gluten free as a new fad diet. You all remember that Oprah Winfrey 21 day cleanse included giving up gluten.

I went gluten free for a year because my insides were completely effed up (I would experience extreme pain anytime I ate glutinous foods, and occasionally just puke it up). Turns out it was a "toxic" environment at my old job, and once I changed jobs it went away. I don't have a better explanation but what I do know is, food is better with gluten. Gluten is delicious.
1I'm trying my best to. I just recently found out that I am allergic to wheat, barley, gluten etc.
2I don't have a choice - I'm allergic to the stuff. I like life much better without it!
3Celiac disease is an autoimmune disorder, rather than even an intolerance. It's also related to type 1 diabetes and there are predictors for each that can be tested.
4Rather than giving gluten up I just try to keep my grain consumption low and I like how I feel.
5I went gluten-free for a while because I was having some serious health issues and thought I might be celiac. It turned out to be an allergy to something else ubiquitous that I found via IGG testing. I eat a lot of whole grain and legume combinations and end up going gluten-free a lot, but not on purpose.
6I had to when I recently did my cleanse. It wasn't too hard...but it was more expensive @ the supermarket. Thank god I lvoe rice things hahah.
7I have Celiac and I found out when I was 12 so the decision was made for me before I even started cooking/buying my own food. Now, it's just my life - the only time it was really hard was in college - no beer = no keg parties and late night pizza was out of the question. That's also when I developed my love for vodka and the ability to outdrink all my friends as well, so it worked out
8My roommate has Celiac's, so I try to make it easy for her and not keep a lot of products with gluten in the house. It's hard though -- wheat is used in a lot of products as a thickener, so it's in things you don't expect.
9My son is at the least gluten-sensitive, and quite possibly celiac but they haven't done all the tests. We tend to eat a lot of gluten-free foods as a result. Most of which are super yummy!
10i understand people who are allergic, but why the others? proteins are suposed to be good for you.
11I have Celiac so I haven't had gluten in almost a year. I can tell a major difference. No more bloating, nausea, or upset stomach. I really miss gluten filled food though. I would kill to have a hot plate of biscuits and gravy and red lobster cheese biscuits.
12I have a friend who is allergic to gluten. Its a killer.
13My son is in a gluten-free, casein-free diet and we put him on it not because he was allergic but because we thought it would help him emotionally. It was the best thing we could have done
14i have 2 friends with celiac and it's a major b*tch. thankfully, i'm all about the gluten and can eat anything i want!
15I'm getting checked for celiac tomorrow. But i want there to be more gluten-free foods for my family members that have it. and then if i do, i will want them for me too!
16i avoid gluten when i can. I buy gluten-free pancakes, grits, etc. but if I'm eating out or whatever I'll eat regular food, just if I'm buying it to stock in my home I'll do without the gluten. i don't have an allergy I just like to be healthy
17I don't eat gluten. I had a boyfriend who was gluten/lactose/sugar/corn/soya intolerant which made mealtimes quite interesting! I basically lived on stir fries and rice cakes for a year. I lost a lot of weight though which stayed off so I am sticking with gluten-free. ;p
I'm also lactose free.
18I miss gluten. My sisters and I all have celiac. This may sound morbid but sometimes we joke about what gluten rich foods we would eat if we were on death row or something (as our last meal). Mine would totally be a huge focaccia, tiramisu and a big pint of Celis beer. Yumm!
