I wholeheartedly believe that breakfast is the most important meal of the day. I love an egg or two in the morning, but am often pressed for time. These mini frittatas save the day, literally. When my day begins with protein, I seem to be much happier. This recipe is super simple and the end product is tasty.

I find I do better with protein for breakfast and the easiest way for me to get protein in the morning is eggs. I like making these frittatas because you can make a week's worth in one shot.
Ingredients
5 eggs
2 tbs low fat milk
3/4 cup diced red pepper
1 package of chopped frozen spinach
5 ounces cup soft goat cheese (chevre)
salt and pepper to taste
Directions
- Microwave spinach on high for two minutes. Wring with hands to drain excess liquid.
- Beat eggs and milk in a small bowl.
- Mix in goat cheese.
- Add veggies and salt and pepper to taste.
- Pour muffin tins coated with canola cooking spray.
- Bake at 350 degrees for 12 to 15 minutes, or until firm and just golden on top.
- Once cooled, you can store the frittatas in the fridge. To warm you can microwave for 20 to 40 seconds to reheat, or pop them in a toaster oven for about a minute.
Makes 9 mini frittatas

YumSugar had an egg recipe posted several months ago that is my go-to egg dish in the morning. You simply butter a ramakin, layer the bottom with a slice or two of ham, pop in an egg, and bake until the yolk is firmed to your liking. About 5 minutes before it is done, I add some soft cheese to the top. It takes just a minute to assemble and by the time that I get out of the shower, I have breakfast!

8Great idea, I hardly have time to make breakfast in the mornings - better than grabbing a muffin at the petrol station.
9I make these with varying proportions of veggies, cottage cheese, eggs, baking powder, and herbs (+ a little buckwheat flour if the mixture looks too wet)...they're delicious, and they keep really well in the fridge. The cottage cheese melts down...you'd never really know it was in there (but yay, protein power!)

11I have a psuedo-recipe for the same type of meal!
12Since i am always in a rush, i usually make my breakfast at work...so I make sure i have a microwavable bowl, some egg whites (in the carton), a container of spinach, mushrooms, whatever other veggie may be around, and some feta cheese. I mix the ingredients in the bowl, microwave for about 1 1/2 minutes, and there you have your complete breakfast (usually have mine with a whole wheat english muffin). It's really simple and good:)
you know, it's really funny - i think that i always thought frittatas were more complicated than they are and never make them, but now i realize that it's not so bad - and i might have to try it. the recipe looks good and it doesn't seem to take very long at all! my fiance might even like the nice treat of a weekend breakfast!

14So I made these the past weekend substituting feta for goat cheese, and they turned out great. Two notes, definitely use the cooking spray in abundance these get stuck in the muffin pan and are a pain to clean. Second, these took about 30 min on 350 versus the 12-15 recommended. I did squeeze out the spinach. I just wanted to let people know as no one needs an egg illness if they do not cook them long enough. I also used a little hot pepper versus the bell pepper for a kick.
