Health Meals Made Easy: Leftovers Are Our Friend

It's always so great when you go out to dinner and they've given you way too much food, so you get to take home a doggie bag of leftovers. Then you have an instant meal waiting for you the next day.

Why not create your own leftovers? What I mean is when you decide to cook, make twice as much (or more) than you were planning to make. Double or triple your recipes so that you'll definitely have leftovers for a couple day's lunch or dinners. Or stick the extras in the freezer and eat them within the next 3 months.

Make a huge pot of soup, an extra casserole or lasagna, bake some extra potatoes or chicken, or cook up some extra rice or quinoa that you can use for later meals.

You can eat the leftovers as is, or add ingredients to them to spice them up and make them different. That way you'll be eating your leftovers, but you won't be bored with them - nobody likes Black Bean Soup 4 nights in a row no matter how tasty it is.

You can add some sautéed tomatoes, mushrooms, and peppers and some rice to thicken it up. Place a few spoonfuls in a flour tortilla with some shredded cheddar and Monterey jack cheese, roll it up, and you've got yourself some burritos.

Fit's Tips: Get creative with your leftovers. Look in your fridge and in your cupboards, and add different ingredients you think could turn leftovers into a "wow" meal.

    I make The Hubs do this with spaghetti because I always think it tastes the better the next day.
