Who isn't trying to eat more veggies in their diet? All those carrots, peppers, cucumbers, broccoli, and tomatoes are so full of vitamins and fiber, and they're also low in calories so they help you maintain a healthy weight. The problem is, they're not exactly an easy convenience food since it takes time to prepare them. That means you'll be more likely to reach into a bag of chips rather than munch on some veggies.

Here's an idea. Once or twice a week, take 20 minutes to wash, cut, peel, and store a whole variety of veggies in plastic containers. Not only will they stay fresh, but they're instantly ready for sandwiches, stir-frys, grilling, casseroles, salads, or just to eat alone. I guarantee this will help you eat more vegetables throughout the week.

i only have carrots & corn in my fridge right now. i need more, definitely.
1My veggies usually just hang out in their bags in the veg drawer, hoping they'll be eaten before they rot :/ When I lived on my own my veggies were pretty much the only thing in the fridge, but living with 3 other people, the fridge is a mess!
2I've made this part of my weekend routine for fruits and veggies. I portion them out, too. It makes packing lunches for my husband and I so much easier. Also, they're an convenient option for snacking.
3I just bought a bunch to do this. All I know is I LOVE the huge bags of cut up broccoli. So convinient!
4We already do this in my house =] It's especially good for me during the school year, so I can pack quick lunches--putting red pepper and cucumber in a wrap with lettuce and hummus, or taking carrot and celery sticks in a little snack bag. Right now we've got zucchini, bagged baby salad greens, and half a diced red onion.
5i avoided doing this for a long time, something about "losing the nutritional value after they've been washed and cut up".
but then i just realized that there is zero nutritional value in rotten produce that gets tossed in the garbage!
last night, i washed and chopped up all the produce for the week
*carrots and broccoli for a stir fry
*raspberries, blueberries, watermelon, strawberries for kids lunches and breakfasts
*asparagus, 2 bags to freeze (while it's cheap!) and a bowl in the fridge for dinner tomorrow
*shelled peas for dinner tonight
*edamame for quick kids snacks and stir fry
*romaine lettuce and spinach
*potatoes (soaking in water to prevent browning) for french fries tomorrow night
i also cook pots of brown rice and pintos and black beans to re-heat throughout the week
it's definitely made life easier and dinner with 3 hungry kids less stressful
6I tend to have alot of frozen produce because I eat alot of veggies from my work, and I don't keep too much in my fridge. Normally I buy prebagged salad, cucumbers and there is always celery.
And fresh in season fruit.
7I like to leave my veggies whole until right before I need them, but I take them out of the bags and lay them out on a tray in the fridge so that I can see what I have.
Which, at the moment, is broccoli, cauliflower, red kumara, brussels sprouts, red capsicum,
celery, carrots, courgettes, chillis, mini pumpkins, regular pumpkin, butternut squash, yams and onions. I practically live on veg!
8My fruit & veg always seem to rot within hours after I cut them. They must be pretty old by the time they get to the store.

10After someone from SugarHQ once mentioned in a comment that he washes lettuces/tomatoes and keeps them in his fridge, I started doing it and it's great! It's so much easier to come back from work, open a box of fresh veg and grab a tomatoes. Plus I noticed that this way, the lettuce lasts so much longer and stays really fresh and crunchy.
We've been out of the country for the last month & a half & just got back on Sunday, so all I have is what I was able to grab on my quick there's-no-food-in-the-house grocery store run: an onion, a red bell pepper, some spinach, & a bag of spring mix salad greens.
11Wow! You're all so disciplined about doing this - - you're inspiring me. Okay, this weekend I will do the same, no more laziness. I usually leave my veggies whole until I'm ready to use them and then I get lazy and eat bad snacks instead.
12That really isn't a bad idea...I mean it's worth it, and eventually you have to do it anyways! I am really going to try this tip out!
13Hoorah!! This is a great tip - I already do this with both veggies and fruit. Celery, carrots, grapes, berries, cut up cantaloupe all work really well.
It helps GREATLY with not eating junk food when you do this, because part of the problem with junk food is its convenience - so if you've got a half-dozen containers of fruit and veg in your frig, and no chips or cookies in the house, guess what you'll grab when you're in a hurry and hungry?
14I never eat fruit or vegetables UNLESS they are cut up and in my fridge. Guess I'm lazy.
15this definately helps! i know that when my lettuce is already washed in the salad spinner i'm more likely to eat a salad with my dinner.
16i've done this for ages and it really is a great thing..better than snacking on 'garbage'
i have in my fridge:
17snap peas
peppers (red, yellow, orange and green)
celery
mushrooms
i've been doing this all summer (im on a chip detox diet jaja) and it really works.. (except on weekends, i love flaming hot cheetos, i cant help it)
18I do this all the time. Right now, I have carrots, broccoli, celery, mushrooms, diced onions, lettuce, spinach, cucumbers, and jicama sticks in the fridge. It saves me so much time and effort and I have no excuse to not eat healthy.
19I love to slice up apples and toss them in a zip bag with a little lemon juice and ceylon cinnamon. With carrots and celery, I put them in containers and cover them with cold water. Keeps them crisp. These are my go-to snacks, that latter two with peanut butter!
20I think this is a wonderful idea for people who tend to snack straight from the fridge, or are in a hurry... if it's already there, in excess... then it's more likely people will reach for it

21My fridge is definitely more full than it usually is!
I've got bagged salad (sometimes I eat a whole thing of that at lunch with some garbanzo beans and a little bit of balsamic dressing), baby carrots, lemons, limes... uh, that's it right now. We used the onion and tomatoes last night for the rice dish... oops, time to head back to the store!
