Learn to Love: Asparagus

One certain sign of springtime is affordable and fresh asparagus at my grocery store. Yep, this unique spear like veggie is now in season and ready for you to enjoy. If you don't already love it, like I do, you should learn to love it.

Although there are three types of asparagus: green, white and purple, the green variety is the most common. Not only is the veggie loaded with antioxidant vitamins A and C, its vitamin K is off the charts. In fact, one cup contains 114 percent of your daily value requirement of K. Plus, asparagus is a natural diuretic and might help reduce water retention during PMS. While we are on women's health, you might be interested to know that asparagus is high in folate (the naturally occurring folic acid) content, and asparagus is considered a birth defect fighter.

  • It will make your urine smell funny, but that doesn't mean it is bad for you. It is just a by product of your body breaking down some of the natural chemicals found in the plant.
  • It is considered an aphrodisiac, based solely on its shape. Hmmmm . . . I will let you work it out from there.

So eat up and enjoy — asparagus is in season until early June.

Fit's Tip: Don't cut the bottoms off the spears, just bend each piece of asparagus, and it will snap just where it needs to. Toss the bottom parts. Or better yet — compost them!

    I like to roast my asparagus in the oven with a little olive oil, garlic, salt and pepper. So easy and it looks pretty. I like the skinny little stalks better than the thick ones since they are sweeter and not as tough.

    i love asparagus! i made a yummy cream of asparagus soup last year around this time...the leftovers are still in my freezer? do you think it will still be good?

    That's the way to do asparagus klandrach! But all things taste better with salt, pepper, olive oil and garlic. ;D

    I had some last night! I usually buy it frozen at TJ's but since its in season now, I'll have to look for the fresh spears. I love to steam it as a side or just cut it up cold and toss it in a salad.

    I absolutely love asparagus! I consume ten stalks a day plus 12-15 ounces of brocoli over the course of five meals. I do this religiously and have achieved wonderful results as far as fat loss is considered. Green veggies are high in fiber and low in calories. Couple a veggie with a chicken breast and a starchy carb (brown rice, oatmeal) and you have the perfect fat burning meal1

    i had so much delicious asparagus when i was in china and now i try to eat it once every 2 weeks or more - steamed and covered in a clear sauce with garlic and ginger.

    I had never had asparagus until I was an adult. I love it but then again I love most veggies.

    I prefer mature asparagus stalks to baby or petite asparagus stalkers. To me mature asparagus has a better, heartier flavor.

    I just bake/roast my asparagus in the oven. A bit of PAM or olive oil and fresh ground black pepper and kosher salt and I'm all set.

    asparagus is one of the few veggies i love. toss it in some olive oil and salt and pepper and throw it on the grill!
