Chickpea and Tomato Salad:
Mom's recipe
This lemony salad reminds me of Spring.
Ingredients
1 can garbanzo beans, drained and rinsed
1/2 red onion, chopped
1 tomato, diced
2 cloves garlic, minced
1/2 cup chopped parsley
3 tablespoons olive oil
2 tablespoon lemon juice
salt and pepper to taste
Directions
Combine everything in a bowl, and chill for two hours before eating.

That's it. Pretty simple huh? You can add other veggies too like chopped cucumbers, celery, or red peppers to make it even more delicious.
